Hawaiian Pipikaula Pork Jerky

I like smoking pork and like how it tastes as jerky.  HEB sells thin pork wafer cuts and first tried it since I don't have the knife skills to cut it thin enough.   I was happily surprised it works to fill my jerky cravings in an easy way.  Now just need to find a source for Hawaiian chili peppers and it would be the perfect jerky I grew up with.

Ingredients

  • 2 packs of HEB wafer cut pork
  • 1/3 C sea salt
  • 1 C golden monk fruit
  • 1 C shoyu
  • 1 C worstershire
  • 5 Hawaiian chili peppers minced, seed included for extra kick or 1 t cayenne pepper
  • 2 t garlic powder
  • 2 t onion powder

Directions

  1. Combine all ingredients and refrigerate overnight
  2. Set smoker to 275 F 
  3. Dry each piece with paper towels before setting on smoker for 3 - 4 hours
