Ribeye Birthday Dinner

We enjoy celebrating birthdays at home with a nice cut of ribeye and mushrooms.  We love the simple joys of life.

Directions

  1. Season Ribeye at least an inch thick with fresh ground pepper and Hawaiian rock salt
  2. Rest at room temperature for 30 minutes
  3. Heat smoker to 450F
  4. Use a probe set for 135F internal temperature for perfect medium rare
  5. Takes about 30 minutes, I have learned to trust the probe :-)
  6. Rest the meat before slicing
