Protein Egg Muffin with Italian Sausage, Cottage Cheese & Cheddar Cheese

I need to eat breakfast, and this is a convenient grab-and-go option to start the. I freeze these and either microwave or reheat them in an air fryer for a crispy cheese top. I believe any of ground pork (Italian sausage, chorizo) works well with this, and I am surprised at how filling it is, likely due to the protein in the cottage and cheddar cheese!
Ingredients
- 1 pound spicy Italian sausage
- 4 eggs
- ¼ C milk
- 1 C cottage cheese
- 1 T olive oil
- 1 T maple syrup
- 1 ½ C flour
- 2 t baking powder
- ½ t salt
- small bunch green onions greens and whites sliced finely
- 2 C cheddar cheese shredded, about 1/2 pound
Directions
- Preheat oven to 400F.
- Cook sausage in a medium skillet over medium-high heat until browned and no longer pink in color. Set aside and allow the cooked sausage meat to cool.
- In a large mixing bowl, whisk together eggs, milk, cottage cheese, olive oil and maple syrup.
- In the same bowl, sift purpose flour, baking powder and salt. Mix well.
- Add your cooked sausage to the bowl and mix.
- Use the left over oil from the sausage pan and brush the muffin cavities for added flavor.
- Divide batter evenly between 12 muffin cavities, about heaping 1/2 C of batter per muffin.
- Bake for 23 minutes.
