I finally got a copy of the famous Texas Monthly Top BBQ Joints!  We moved to Texas in 2015 and have been on such a fun discovery of what good BBQ is.  We love driving through the state for BBQ and finding amazing flavors.  Learned there's many styles of BBQ, but what's consistent is the care taken and the hospitality shared with those of us willing to wait in line to enjoy their craft.  There's a special talent to understand cuts of meat, how to manage a fire to special techniques of cooking.  I have learned that these places are not only good with fire but also make delicious sides and desserts.  Chocolate pudding is something I never expected, but most of these places do it really well and usually take some home.  We always travel with a cooler for leftovers!

We have been lucky to discover these special places before they became rockstar popular.  So happy to see their success and willing to put their style out there for all of us to enjoy.  I appreciate the food and inspiration to try something new at home on my little smoker. It's wonderful to see how tight knit the BBQ community is and supports each other.  We have been to several Interstellar events where they feature a guest pitmaster like Khoi BBQ from Houston and another guest from the UK.  

We are fortunate to watch these talented people grow from pop ups to food truck to their own place.  Definite worth driving for good food and making new friends while waiting in line to enjoy the best tasting BBQ!  Bonus we get to see what a beautiful state Texas is with its natural beauty and history.  Wonder how long it takes to get my bingo card stamped :-).
