Cucumber in Garlic Peanut butter Sauce

Cucumbers might be my favorite summer vegetable, especially when loaded with plenty of garlic and peanut butter! I made this using round slices, but the sauce kept sliding off, so I think half-moon cuts hold it better. It’s simple, refreshing, and requires no cooking at all. Ingredients

  • 3 large English cucumbers sliced about 1/3rd inch thick chunks; the circle shapes didn't hold as much sauce for me :-)
  • 1/2 r salt
  • 3/4 C chopped peanuts
  • 2 1/2 T shoyu
  • 2 1/2 T rice wine vinegar
  • 2 1/2 T peanut butter
  • 1 1/2 T honey
  • 2 -3 t minced garlic
  • 1 t dried red chili flakes, crushed with mortar and pestle
  • 1/2 teaspoon ground black pepper 

Directions

  1. Place the cut cucumbers into a mixing bowl. Sprinkle in the salt and toss to coat. Transfer the cucumbers to a colander for one hour, allowing the excess water to drain and dry with a towel.
  2. In a small bowl add shoyu, rice wine vinegar, peanut butter, honey, garlic, dried red chili flakes, and ground black pepper. 
  3. Once the cucumbers have drained for one hour, transfer them to a bowl along with the peanut sauce mixture. Toss well to coat. and enjoy.
