SPAM fans will LOVE this new flavor Korean BBQ with just the right amount of spicy heat and savory goodness to compliment any rice dish, where it be in the famous musubi version or the simple fried rice.  I tried turning the fried rice into a musubi to make it portable, but it was a bit too wet for the nori.  However, shredding and pan frying for extra crispiness is pretty good with or without the extra smoke.

 

Ingredients

  • 1 can of SPAM, grated
  • 1-2 T gochujang paste
  • 1 T sesame oil
  • 2 T monk fruit
  • 1 T minced ginger
  • 1 T minced garlic
  • 1 T water
  • Leftover rice

 

Directions

  1. Smoke and/or pan fry the shredded SPAM until crispy.
  2. Add leftover rice to pan/wok, breaking up clumps over medium heat a few minutes. Remove from pan and set aside.
  3. Add all remaining sauce ingredients to pan over medium heat, stirring until thick and bubbly
  4. Return SPAM and rice to pan, mix until well combined and enjoy.  I like a fried egg for extra creaminess to top it off.
