Focaccia with green onions and sesame seeds
After eating Deft Pizza's focaccia I started craving it at home. It takes some time to make but it's so easy. Perfect when the weekend weather makes outdoor activities not fun and reward yourself with a home that smells wonderful. Toasting cut slices then drizzle good balsamic vinegar and a schmear of smooth ricotta makes for a comforting snack.
Ingredients
- 4 C flour
- 1 T sea salt
- 1 1/2 t rapid rising yeast
- 2 C room temperature water
- 4 T olive oil (2 T for the green onion and 2 T for the pan and drizzle before baking
- 2 C chopped green onions
- 1-2 T roasted sesame seeds
Directions Plan on 2 days before eating. Schedule two 30-minute proofs for day one and a one-hour proof for day two.
Day 1
- Combine flour, salt, yeast to a large bowl.
- Add water slowly to bowl mixing with a rubber spatula until the flour is combined completely.
- Proof #1 Cover with a damp towel and proof for 30 minutes. I have an air fryer with a proof mode 90 degree setting!
- Remove and use the spatula to fold and stretch the dough a few times in the bowl.
- Proof #2 Cover and proof for another 30 minutes.
- Place plastic wrap over the bowl and refrigerate overnight.
Day 2
- Remove from the refrigerator and bring to room temperature about 2 hours.
- Mix chopped green onions and add 2 T olive oil and pinch of salt.
- Add 1 T olive oil to the sides and bottom of the 9x13 baking pan.
- Stretch the rested dough on the pan
- Spread1 C green onion mixture over the dough.
- Fold the lengthwise ends to the middle.
- Spread 1/2 C green onion mixture over the folded dough.
- Fold the top and bottom of the dough to the middle, pinching the ends to keep the green onions in.
- Press into the shape of the pan with spatula or hand.
- Spread last remaining 1/2 C green onions on top, sprinkle sesame seeds and drizzle olive oil.
- Make dimples like traditional focaccia.
- Proof #3 - 1 hour
- Bake 475F for 20 minutes until golden.
- Enjoy toasted slices with balsamic vinegar, ricotta cheese, and roasted tomato.
