Guacamole ArnieTex

 

I lived in Texas for 10 years before making guacamole after buying my first Mexican cookbook by Arnie Segovia. These recipes are my kind of cooking with simple, flavorful ingredients.  This is my favorite way to eat green food.  The freshness makes me feel healthy.

 

I forgot my brother gave me a molcajete and used a potato masher for the avocados, I was too excited to make it when I realized how fast the avocados ripened.  I'm sure next time it will add extra flavor. That way it will definitely look like the picture in the cookbook.

Ingredients

  • 6 ripe avocados, cubed and coarse mashed
  • 2 Roma tomatoes, cubed
  • ½ red onion, finely chopped
  • 2 T garlic finely chopped
  • 1 jalapeno, finely chopped
  • 1 bunch cilantro, coarsely chopped
  • 1/3 C fresh lime juice
  • 3 t salt

Directions

  1. Combine all ingredients for a chunky texture
