Sweet Sour Deep Fried Pork Butt

Had an extra pork butt and wanted to try something different than my usual smoked pulled pork when I get Costco shopping 2 to a pack.  This needs to marinate overnight and had a good arm workout cutting this BIG butt!  I had to sharpen my butcher knife to do the 7-pound butt, safety first! At least I got the other butt smoked for meal prep.

Ingredients

  • 7-pound pork butt cut into 2" pieces
  • 1 C Chinese Black vinegar
  • 6 T shoyu
  • 6 T monk fruit
  • 6 t Chinese five spice powder
  • 1 C Chinese Rice Wine
  • 1 cup cornstarch
  • ½ C flour
  • Cooking oil for deep frying

 Directions

  1. Cut the pork into 1" pieces.
  2. Add to the marinade all ingredients except cooking oil.
  3. Refrigerate overnight.
  4. Heat oil to 350F and fry until golden, about 5 minutes, depending how thick the pieces are.
