Our dogs eat healthier than we do, enjoying fermented soybeans to keep their guts healthy. Since I’m already cooking their food once a month, Dog Food / Recipes | Cooking with Aloha, Texas Style why not add Japanese natto to their diet?  It's easy with an Instant Pot, just takes 1 day to soak and next day to ferment.

This batch fills a 12-cupcake silicone mold for easy food prep.  Dogs help with the cleanup by licking the spatula, good dogs!

Ingredients

  • 3 C soybeans, about 1.3 pounds

Directions

  1. Rinse and soak 3 cups dry soybeans for 24 hours with extra water to cover the beans since they will expand in a large bowl
  2. Drain and place soybeans in steamer basket in the Instant Pot with 3 cups of water in bottom of pot coming up to the bottom of the steamer basket for my pot.
  3. Set to pressure cook and select beans cook for 3 hours.
  4. Remove the basket from the pot. Save ½ C of cooking liquid, set a side and discard the remaining liquid.
  5. Return soybeans back in the empty pot. Level out the beans and add 1/2 of a cup of the cooking liquid back in. The liquid provides the moisture needed for the beans to properly ferment.
  6. Place lid back on and set to yogurt setting which will ferment the beans and set the timer for 24 hours.
  7. Remove the lid and mix the beans until the stringy natto slime is visible.
  8. I use silicone cupcake molds and freeze, then pop out frozen natto cups in storage container since they defrost quickly.
