Frozen Cream Corn with Cotija Cheese
This is my lazy version of creamed corn with Mexican inspired flavors.
This makes a lot and since I discovered how easy it is to make my own mayo,1 Whole Egg Mayo / Sides / Recipes | Cooking with Aloha, Texas Style needed to adjust the recipe to use the entire cup of mayo :-). Best part is it's easy and has a great punch of flavor from the fresh lime juice, and chili powder with the creaminess from the mayo and sour cream. It's a great side dish to feed a crowd.
Ingredients
- 8 T butter
- 5 pounds of frozen corn, about 16 C
- 1 C mayonnaise 1 Whole Egg Mayo / Sides / Recipes | Cooking with Aloha, Texas Style
- 1 C sour cream
- 2-3 C cotija cheese
- 1/3 C lime juice
- 4-t cumin
- 4 t chili powder
- 1 bunch cilantro, coarsely chopped
Directions
- Melt butter in a large pan over medium high heat
- Stir in frozen corn, until just heated through, stirring to keep from sticking to pan
- Stir in mayo, sour cream, lime juice, cumin and chili powder
- Add half of cotija cheese, stir until melted
- Add remaining cotija cheese and cilantro
- Enjoy
