Frozen Cream Corn with Cotija Cheese

This is my lazy version of creamed corn with Mexican inspired flavors.

This makes a lot and since I discovered how easy it is to make my own mayo,1 Whole Egg Mayo / Sides / Recipes | Cooking with Aloha, Texas Style needed to adjust the recipe to use the entire cup of mayo :-).  Best part is it's easy and has a great punch of flavor from the fresh lime juice, and chili powder with the creaminess from the mayo and sour cream.  It's a great side dish to feed a crowd.

  1. Melt butter in a large pan over medium high heat
  2. Stir in frozen corn, until just heated through, stirring to keep from sticking to pan
  3. Stir in mayo, sour cream, lime juice, cumin and chili powder 
  4. Add half of cotija cheese, stir until melted
  5. Add remaining cotija cheese and cilantro
  6. Enjoy
