Soba Noodles with Smoked Chicken

 

Soba noodles are my favorite summer noodle since it's good cold and adding smoked chicken makes it hearty.  I learned the hard way to use a microwave safe container to make the dressing, otherwise it is literally a hot mess to clean up.  The rest of the steps are easy to enjoy this sweet, spicy noodle with or without the smoked protein.  It makes an easy meal to transport for tennis tournaments. The kitchen helpers seemed to approve of cleaning up what I may have dropped, as Patch and Lokelani are reliable floor cleaners.

Ingredients

  • 1.5 pounds soba buckwheat noodles
  • 1 C green onions. chopped
  • 1 bunch cilantro, chopped 
  • 6 T roasted sesame seeds
  • Dressing
  • 2 T olive oil
  • 3/4 C sesame oil
  • 1 t crushed red pepper flakes
  • 3/4 C honey
  • 3/4 C shoyu

Directions

  1. Bring water to a boil and cook the soba noodles according to the package instructions but keep it al dente
  2. Drain into a colander and rinse the soba under cold running water
  3. Drain well and transfer to a large bowl
  4. For the dressing, it's important to use a microwave safe container, I had a mess cleaning up when the plastic bowl melted :-(
  5. Combine olive oil, sesame oil and crushed red pepper flakes in microwave safe container
  6. Microwave on high 3 minutes, take care to remove as it will be hot, set aside to cool
  7. Combine honey and shoyu in a large bowl
  8. Add the cooled oil to the bowl and whisk until honey is dissolved
  9. Add drained soba to bowl and toss
  10. Add cilantro, green onions and sesame seeds to garnish and serve
