1) InfraRed thermometer is a must have for consistent oil temperature readings.  I use mine a lot making perfectly fried crispy food. Safety first- recommend having a way to put out a fire should occur like a fire blanket for the home is an easier option than a fire extinguisher

3) A metal fine strainer catches all the little bits from the battered food, prevents the bitter and burnt oil taste, keeping the oil clean.

 

 

4) Cooling rack drains the oil from the food while it cools.  I hate cleaning the mess and place foil EVERYWHERE oil or batter could drip, makes for easy cleaning

 

 

5) Repurpose Costco aluminum rectangle pans as staging for flour, egg and panko coatings, it also makes it easier to transfer batter dipped food into the hot oil.  Use disposable gloves or long tongs to place food into hot oil to protect your hands!
