Ginger Lemon Gummy Bites

This refreshing snack bite feels healthy, featuring fresh ginger and lemon juice, lightly sweetened with a touch of honey in a small gummy bear form. It’s simple to make and fun to eat.

Ingredients

  • 2 oz fresh ginger minced/grated (or more for a stronger flavor)
  • 1 1/4 C water
  • 1 T honey
  • 2 T lemon juice
  • 1 1/2 T gelatin powder (.25 oz packets X2) (use less for a less firm gummy)

Directions

  1. Add minced/grated ginger to a pot with 1 1/4 cup water.
  2. Bring to a boil and lower to simmer 10 minutes.
  3. Cool for 10 minutes,
  4. Pour liquid through a mesh strainer.
  5. Add honey, lemon and gelatin, stir until dissolved.
  6. Add warm water to measure 1 cup.
  7. Drizzle silicone mold with oil and wipe with paper towel for easy pop out of molds.
  8. Place mold on a small cutting board to prevent spilling when placing in the refrigerator, I don't trust my steadiness :-).
  9. The mold should set up within 90 minutes and pop out of molds when pushed from the bottom.
  10. I keep them stored in a glass container and pop a few when craving something healthy.
