I haven't had luck growing peppers and always have to make a run to the market when I need them.  Wanted to see how they are when dehydrated.  The process is simple and spiciness of the peppers may have even intensified!  When I went outside to grind it to a powder next to my smoker thought it would be awesome to smoke it BEFORE dehydrating for extra flavor, will do it next time.  At least I will have jalapenos available this summer and excited to see what else I can use it with.

Ingredients

  • 2 pounds jalapenos washed and dried

Directions

  1. Cut the jalapenos thin, mandolin is quicker and safer for me
  2. Place on dehydrator racks on a single layer
  3. Set Dehydrator to 130 F for 5 hours
  4. Grinding the dehydrated peppers - use gloves and a mask when handling, I did it outside
  5. Place dried jalapenos in a spice grinder for about 30 seconds until it becomes a powder.
  6. Work in batches.

         Made about ¾ C powder and left as whole slices for cooking in sauces.

Tips/Warning

  • Jalapenos have a nice flavor and heat, but it will stay on hands if not washed immediately after handling and don’t touch your face.
  • Use a spice/coffee grinder to make the powder as fine or coarse as you like.
  • A mask and gloves are essential when grinding as it can get in the air, it hurts when inhaled.
  • Grinding it outside is safer since it can make a mess and I don’t want to find residual powder unexpectedly on my counter.
  • I used a paper towel to remove any residual pepper from the grinder, just in case :-)
