I like smoking Pork Spareribs because it's meaty, simple and makes great leftovers for the week.  Costco usually sells the ribs in a 3 pack rack and use a dry rub with lots of spices or simple salt and pepper, no sauce needed.

  1. Set pellet smoker temperature to 350-375 F
  2. Season ribs with any dry rub, I like to use gochujang and apple cider vinegar as a glue to hold the rub, or olive oil works too.
  3. For an easy clean up, I place ribs on a sheet pan lined with butcher paper or a silicone liner.  
  4. Ribs are done in about 3-4 hours or when rib bone is visible, no meat thermometer needed.
  5. Rest the ribs about 30 minutes to 2 hours in the oven or wrapped in a cooler for a tender moist bite.
