Pork Cushion Slow Cooker

Pork cushion is packaged in cute triangle pieces, boneless and easier to handle instead of a whole butt. Each piece weighed a few pounds and being Costco, there were a lot of triangles! I think this may be my new favorite pork cut.
First time seeing pork cushion at Costco and since it was $1.99 a pound thought it would be good to throw on the smoker. Unfortunately, the Texas weather kicked in with heavy thunderstorms and decided it's safer to cook indoors. This has to be one of the best Plan B's I have done. Next time when the weather cooperates, I will try this on the smoker but happily surprised how easy this was to make. Pork is the best for low and slow for pulled pork tenderness.
Ingredients
- Pork cushion cuts - a few pounds
- Cover pork with favorite BBQ rub
- 4 C Pho or beef broth
- 2 T fresh ginger
- 2 T minced garlic
- 2 onions rough chopped
Directions
- Combine all ingredients to slow cooker .
- Set on low for 8 hours and serve over rice.
