Lazy Man's Sushi Rice Bara Sushi

Growing up in Hawaii, Mom was physically disabled and would make what she called 'lazy man's sushi rice' where we enjoyed the rice without rolling skills or having the fried tofu skins to fill the cone or inarizushi. I like the simplicity of ingredients with the pickled ginger makes it especially tasty on a hot day.
Trying to be healthy these days, I use a white and brown rice combination.
Ingredients
- 5 C cooked rice
- 1/2 C monk fruit
- 1/2 C rice vinegar
- 1 T garlic salt
Directions
- Cook rice in rice cooker Pressure cook Brown and White rice for lower carbs / Helpful Hacks | Cooking with Aloha, Texas Style
- Combine the monk fruit, rice vinegar and salt until dissolved.
- Pour slowly over hot rice.
- Add favorite additions like carrots, mushrooms or my favorite - pickled ginger chopped for freshness of flavor and color.
