Hardboiled Eggs
It's always fun to explore what works on the smoker when I have extra space—two out of three isn't bad! Hardboiled eggs and coarse sea salt turned out great, while the dehydrated jalapeños got a bit overdone; maybe next time, I'll take them out earlier for just a touch of smoke. I was pleasantly surprised by the subtle smoky flavor and the brown grill marks on the eggs.

- Raw eggs
Directions
- Bring raw eggs from refrigerator to room temperature, about 30 minutes
- Set smoker to 250F
- Place eggs directly on the grill, about 90 minutes
- Remove smoked eggs and set immediately in an ice bath. Test 1 egg to make sure it's cooked through. The cold water makes it easier to peel and cools it down faster to eat.
- Add mayonnaise and mustard to the chopped eggs for the egg salad filling and eat on sliders or crackers.
