Hardboiled Eggs

It's always fun to explore what works on the smoker when I have extra space—two out of three isn't bad! Hardboiled eggs and coarse sea salt turned out great, while the dehydrated jalapeños got a bit overdone; maybe next time, I'll take them out earlier for just a touch of smoke. I was pleasantly surprised by the subtle smoky flavor and the brown grill marks on the eggs.

  • Raw eggs 

Directions

  1. Bring raw eggs from refrigerator to room temperature, about 30 minutes
  2. Set smoker to 250F
  3. Place eggs directly on the grill, about 90 minutes
  4. Remove smoked eggs and set immediately in an ice bath. Test 1 egg to make sure it's cooked through.  The cold water makes it easier to peel and cools it down faster to eat.
  5. Add mayonnaise and mustard to the chopped eggs for the egg salad filling and eat on sliders or crackers.
