Chinese Almond Cookies

 

My auntie made these when I came home from school on the mainland.  It is light and crispy and easy to devour in one sitting.  I'm glad she shared how simple this is to make and the dough is easy to handle.  It's not until we move away is when we appreciate what we had and able to show gratitude with our time and sharing food.  I continue my mom and auntie's tradition of sharing food with friends and the dogs help keep the floors clean with the crumbs I may drop for them.

Ingredients

  • 4 C four
  • 2 C sugar
  • ½ C peanut butter
  • 2 C vegetable oil
  • 1 egg
  • 1 T almond extract
  • 1 t lye water
  • 1 t baking powder
  •  ½ t baking soda
  •  1 ½ T water

Directions

  1. Combine flour, sugar, peanut butter, oil.
  2. Add egg, almond extract, lye water.
  3. Dissolve and add to the mix baking powder, baking soda water.
  4. Form into balls (use small scoop) (and press with red dot for Chinese New Year, optional)
  5. Bake @ 325 for 20 mins on ungreased cookie sheet.
