Sweet Potato Sesame Balls (Fried Goodness)
Sweet potato mochi hits the spot when I'm craving a fresh warm bite. It's pretty easy to make a small batch/single serving :-).
Ingredients
- 1 sweet potato about a half pound, microwave 5 minutes
- 1/2 C of glutinous rice flour (green label)
- 2 T monk fruit
- 4 T sesame seeds
- 1 T glutinous rice flour (green label)
- 1/2 C water
- Cooking oil
Directions
- Wash and poke holes in sweet potato
- Microwave 5 minutes, cool and scoop potato into a bowl, discard the skin or give to dogs as treats.
- Use a hand mixer to puree the sweet potato
- Add the monk fruit
- Add the glutinous rice flour slowly while mixing until it’s smooth and soft.
- Scoop the dough and roll them into balls with a small scoop, about 12 pieces.
- In a small bowl mix together 1 tbsp of glutinous rice flour with ½ cup of water.
- Add the sesame seeds in a small bowl.
- Take each ball, dip it into the flour/water mix with a fork and place into the sesame seed bowl. Move the bowl in circular motion until your sweet potato ball is completely covered with sesame seeds, place on a pan.
- Heat cooking oil to 250-300 F and then reduce the heat to medium.
- Add the sweet potato sesame balls in the pan. Cook them while gently turning them from time to time, about 4 minutes.
- Remove the sweet potato sesame balls from the pan and serve.
