Rice Crispy with Ginger & Sesame Seeds

Ginger is a super food so this makes it a healthy snack, in my mind.  I buy ginger in bulk, puree in food processor, and freeze in ice cube tray to always have it available.  I usually add extra ginger to any recipe.  Beef fat or tallow is nice flavor alternative to butter.

Ingredients

  • 8 T (4 oz) tallow or unsalted butter
  • 1 T ginger juice (grate the ginger then squeeze juice out through a garlic press) I will toss in the grated pressed ginger if I'm not         using it for another recipe.
  • 10 oz bag mini marshmallows
  • 8 C rice crispy cereal
  • 2 T black sesame seeds  
  • 2 T roasted sesame seeds 
  • sea salt

Directions

  1. Add a little tallow to a 9 x 13 pan for an easy release, set aside.
  2. In a large pot add tallow, marshmallows, ginger juice over medium heat until marshmallows are melted.
  3. Remove from heat, add rice crispy cereal and sesame seeds until mixture is combined.
  4. Pour into prepared pan, press firmly to compress.  Parchment paper or a silicone spatula works to evenly spread it.
  5. Lightly with sprinkle sea salt. 
  6. When cooled, transfer to a cutting board and cut into bite sized pieces.  For tennis friends to enjoy at the courts, it's easier to transport and enjoy in paper cupcake wrappers.
