Loco Moco, it's all about the gravy
Making the gravy with tallow instead of butter takes it to the next level of beefiness. This is the best of Hawaii with the brown gravy and the Texas beef and tallow for the perfect pairing of breakfast or dinner. For dinner I like to sauté onions and mushrooms and mix it with the gravy as my vegetables lol.
Ingredients
- Ground beef patty, make as many as you like packed tightly
- ¼ C flour
- ¼ C tallow or melted butter (Make your own tallow here Brisket fat trimmings to tallow / Helpful Hacks | Cooking with Aloha, Texas Style (cooking-with-aloha-texas-style.com)
- 2 C water + 3 1/2 t (Better than bouillon paste for beef broth)
- 1 C milk
- 1 C water
- Salt and pepper to taste
- Optional - Sautee sliced mushrooms and onions and an egg on top.
Directions
- In a saucepan melt tallow or butter over medium heat, whisk flour in until flour bubbles and caramelizes, about 3 minutes.
- Pour in beef broth.
- Lower heat and simmer 5 minutes.
- Add milk and water.
- Return heat to a boil stirring constantly.
- Reduce heat to simmer 10 minutes or until gravy thickens, Gravy makes about 2 1/2 C.
- Heat pan to medium high heat, add tallow or butter to pan.
- Add hamburger patties to the pan and flip when it’s crispy bits appear, repeat and set aside when done.

Serve with rice, hamburger patty, mushrooms, onion and cover with gravy, and top with a sunny side up egg for extra yoke indulgence.
