Ground Pork with Tofu Sambal Olek (Chili Paste)

Easy weeknight meals that come together in 30 minutes with what's in my refrigerator is nice to warm up with the sambal based pork over hot rice.  Bonus it's an easy clean up. 

 

Ingredients

  • 3/4-pound ground pork
  • 1/2 block soft tofu, cubed
  • 1 T minced garlic
  • 1 T minced ginger
  • 1 t Sambal Olek, or more if you like spicy
  • 1 1/2 T shoyu
  • 1 C broth

 

Directions

  1. Brown pork over medium heat
  2. Add remaining ingredients, bring to a boil and turn off heat.
  3. Serve over rice and garnish with green onions, optional.
