Banana or Mango Bread Muffins
I miss mango season and ended up using bananas as a substitute. I like that it freezes well and the perfect post tennis match snack that's hand held and enjoy it cold. Bananas are always available, mangoes not so much...this makes due until it comes into season.

Ingredients
- 2 C flour
- 2 t baking soda
- 1 t baking powder
- 3 t cinnamon
- 3 eggs, well beaten
- ¾ C olive oil
- ¾ C sugar
- 3 pounds ripe bananas or mango
- 1 C rough chop walnuts
Directions
- Sift flour, baking soda, baking powder and cinnamon in a small bowl, set aside
- In a large bowl beat eggs
- Add olive oil
- Add sugar
- Mash bananas (or mango, if lucky enough to have a lot,) I like it chunky and use a fork
- Add the dry ingredients and mix until just combined
- Scoop into cupcake molds, makes 24
- Bake @ 350 F for 25 minutes, or until a cake tester comes out clean, I use a chopstick
I freeze them in 4 packs to share with my tennis friends.
