I am lucky to have a neighbor who raises organic Japanese Jumbo quails and shared his knowledge.  Had no idea how good they are!

1) Quail egg scissors makes cracking these easy with a bowl of water for the empty shells and clean bowl for the eggs. 

2) Use a scale to get an idea of weight needed for what I used in recipes with regular eggs.

These eggs are wonderful in cookies, pan fried or in Japanese pancakes (okonomiyaki).
