Taco Rice, sort of...
I’ve heard of Taco Rice from Okinawa but never tried it, so I made my lazy version using leftover pulled pork, guacamole, napa cabbage, and rice all mixed together. Since the guac already has avocado, lime, cilantro, jalapeño, tomato, and garlic, I didn’t need to add anything else. I considered adding crema but didn’t feel like running to the market—this already has creaminess from the guac, savory smokiness from the pork, and crunch from the napa cabbage.
Best part of this is having leftovers make another tasty meal that's easy!
Ingredients
- Leftover Pork Butt / Pork / BBQ Smoke / Recipes | Cooking with Aloha, Texas Style

- Napa cabbage small head sliced thin
- Rice Pressure cook Brown and White rice for lower carbs / Helpful Hacks | Cooking with Aloha, Texas Style
Directions
- Heat leftover pork in a pan or microwave.
- In a bowl layer the rice, pork, shredded cabbage and guac.
- I like to mix it all together to get every flavorful bite, may not be pretty, but definitely tastes good!
