Hard Boiled Egg Mayonnaise
I was curious about how using hard-boiled eggs instead of raw eggs would affect mayonnaise. It's just as easy, and I can't tell the difference when I make egg salad. 1 Whole Egg Mayo / Sides / Recipes | Cooking with Aloha, Texas Style is a bit more tangy.
Ingredients
- 2 hard boiled eggs
- 1 T white wine vinegar
- 1 T Dijon mustard
- 1/2 t salt
- 1/4 t black pepper
- 1 C olive oil
Directions
- All ingredients should be at room temperature for better emulsion.
- Boil and peel eggs, place in ice water for easy peeling and place in food processor.
- Add remaining ingredients EXCEPT olive oil and mix until smooth, about a minute.
- Slowly drizzle the olive oil until it thickens to a creamy consistency.
- Season to taste and refrigerate. I like it in egg salad, will try it with a tuna salad next time.
