Hard Boiled Egg Mayonnaise

I was curious about how using hard-boiled eggs instead of raw eggs would affect mayonnaise. It's just as easy, and I can't tell the difference when I make egg salad.  1 Whole Egg Mayo / Sides / Recipes | Cooking with Aloha, Texas Style is a bit more tangy.

Ingredients

  • 2 hard boiled eggs
  • 1 T white wine vinegar
  • 1 T Dijon mustard
  • 1/2 t salt
  • 1/4 t black pepper
  • 1 C olive oil  

Directions

  1. All ingredients should be at room temperature for better emulsion.
  2. Boil and peel eggs, place in ice water for easy peeling and place in food processor.
  3. Add remaining ingredients EXCEPT olive oil and mix until smooth, about a minute.
  4. Slowly drizzle the olive oil until it thickens to a creamy consistency.
  5. Season to taste and refrigerate.  I like it in egg salad, will try it with a tuna salad next time.
