Grilled Cabbage Slaw - No Mayo

This was the first recipe I made from Evan LeRoy's New School Barbeque cookbook.  I like he shares recipes are from the restaurant.  My favorite part was the types of smokers and shows the image on the recipes.  One day I will graduate from my little pellet smoker to a wood burning one... In the meantime, this cookbook will get a lot of use since there's a lot of flavors and recipes I want to make!  I'm 'trying' to be more open to adding vegetables into my cooking and smoking seems to be the best way for me :-)

Ingredients

  • 1 head cabbage
  • Oil 
  • 2 cilantro bunches - rough chop leaves, no stems
  • 1/2 C honey
  • 1 C apple cider vinegar
  • 1 T caraway seeds
  • 1 T sea salt

Directions

  1. Cut cabbage in quarter pieces, *I made extra cuts since the cabbage was BIG and funny shaped.
  2. Brush the cabbage with oil so it won't stick to grill or pan
  3. Heat grill/pan to high heat to get that nice char.
  4. Place cabbage on grill/pan until charred about 1-2 minutes.  If heat's not high enough it will look like mine above and not like the pretty char in the book, I will be more patient next time for the heat to get there.
  5. Cut the cabbage to bite size pieces and toss in a bowl, the recipe says to cut ribbons, but my knife wasn't sharp enough, I don't mind a bigger bite.
  6. Add cilantro to bowl.
  7. Combine the remaining dressing ingredients and add to bowl.
  8. Chill and enjoy with a nice smoked protein.
