Daikon Radish Slow Simmered

Had leftover daikon from tacos Pulled Pork / Pork / BBQ Smoke / Recipes | Cooking with Aloha, Texas Style  and wanted to try a savory version of a Japanese side dish. Traditionally, it’s made with konbu—dried kelp soaked overnight—but since I didn’t have any, chicken broth did the trick! Not authentic, but I like working with what’s on hand. Dried konbu is definitely going on my shopping list for next time. The daikon turned out tasty and tender, and I think Dad would approve :-).

Ingredients

  • Daikon about a pound
  • 2 C chicken stock 
  • 1 1/2 T shoyu
  • 2 T mirin
  • 1 T sake

Directions

  1. Peel the daikon.
  2. Cut to 1 inch rounds, add cross cuts about half way through to soak up sauce.
  3. Place daikon cut side down in pot.
  4. Combine remaining sauce ingredients and add to pot.
  5. Boil 10 minutes. 
  6. Reduce heat to simmer about an hour.
