Daikon Radish Slow Simmered
Had leftover daikon from tacos Pulled Pork / Pork / BBQ Smoke / Recipes | Cooking with Aloha, Texas Style and wanted to try a savory version of a Japanese side dish. Traditionally, it’s made with konbu—dried kelp soaked overnight—but since I didn’t have any, chicken broth did the trick! Not authentic, but I like working with what’s on hand. Dried konbu is definitely going on my shopping list for next time. The daikon turned out tasty and tender, and I think Dad would approve :-).
Ingredients
- Daikon about a pound
- 2 C chicken stock
- 1 1/2 T shoyu
- 2 T mirin
- 1 T sake
Directions
- Peel the daikon.
- Cut to 1 inch rounds, add cross cuts about half way through to soak up sauce.
- Place daikon cut side down in pot.
- Combine remaining sauce ingredients and add to pot.
- Boil 10 minutes.
- Reduce heat to simmer about an hour.
