Belly Burnt Ends

Pork belly is one of the easiest proteins to smoke since it has good fat flavor and doesn't need a lot of prep and a faster cook than smoking a brisket of similar size.  

Ingredients

  • 1 whole pork belly with skin on, about 10 pounds from Costco
  • Favorite BBQ dry rub and sauce
  • 1/4 C tallow or butter

 

Directions

  1. Tenderize the skin with holes, not sure if it helps with flavor, but since I do it for a crispy skin, why not
  2. Cut the belly into 2" cubes
  3. Generously season the cubes 
  4. Place on rack in the smoker, set to 250 F for 3 hours
  5. Mix about 1 cup of BBQ sauce with 1/4 C tallow
  6. Remove meat from smoker, transfer to a large pan and toss in BBQ sauce mixture
  7. Cover with foil and return to smoker or oven set to 275 F for 2 hours or until the skin fat and pork are rendered soft
