Belly Burnt Ends
Pork belly is one of the easiest proteins to smoke since it has good fat flavor and doesn't need a lot of prep and a faster cook than smoking a brisket of similar size.
Ingredients
- 1 whole pork belly with skin on, about 10 pounds from Costco
- Favorite BBQ dry rub and sauce
- 1/4 C tallow or butter
Directions
- Tenderize the skin with holes, not sure if it helps with flavor, but since I do it for a crispy skin, why not
- Cut the belly into 2" cubes
- Generously season the cubes
- Place on rack in the smoker, set to 250 F for 3 hours
- Mix about 1 cup of BBQ sauce with 1/4 C tallow
- Remove meat from smoker, transfer to a large pan and toss in BBQ sauce mixture
- Cover with foil and return to smoker or oven set to 275 F for 2 hours or until the skin fat and pork are rendered soft
