I had heard about southern corn cookie but haven't been able to find one.  Saw the recipe on the back of the cornbread mix and had to try it!  One of the few times I didn't tweak a recipe and happy to get the idea of what it should taste like now.  I like the cornmeal texture and how crumbly the cookie is.  Unfortunately, not durable enough for the tennis court since it was a bit more  delicate to eat, thank goodness it tastes good and eating it outside means I don't need to clean the crumbs off the court.

This is a fun new cookie flavor that is easy to bake following the instructions exactly.  It's also perfect for baking in a small air fryer oven!
