Red Lentil Chia Seed Flat Bread
I experimented with a few variations of flatbread to pair with egg salad, and this is a loose version of my simple recipe. It’s hearty, easy to make, and the longest step is soaking red lentils for about two hours. I love adding extra flavor, so I used Hardcore Carnivore Black seasoning—normally my go-to for smoking tri tip—in the batter instead of pepper. I never realized bread could pack so much protein and flavor! It may not be pretty, but I cut it to squares or have it as an open-faced sandwich :-)
Ingredients
- 1 C red lentils
- 1 1/3 C water
- 2 T chia seeds
- 1 1/2 t garlic salt
- 1 1/2 t Hardcore Carnivore Black seasoning
- Olive oil to drizzle on pan
Directions
- Soak red lentils about 2 hours.
- Drain and rinse lentils.
- Add lentils to blender or food processor.
- Add 1 1/3 cup water and blend until smooth, about 2 minutes.
- Pour the lentils to a small bowl.
- Add and mix the chia seeds, garlic salt and Black seasoning.
- Rest about 10 minutes, until the chia seeds gel with mixture.
- Heat oven to 400F.
- Place parchment on pan and drizzle olive oil on the bottom to keep from sticking.
- Add the batter and spread in pan. I was able to fill 2 small pans for the batter.
- Bake 20 minutes.
- Reduce heat to 350F and flip bread, bake another 5 minutes or so.
- Enjoy warm from the oven or toast for next day.
