Beet Fries

This is how I like to eat vegetables, baked and fried with a spicy dipping sauce.  An air fryer works great for this since it's just 3 large beets, no need to heat the house with the oven. Or double the beets and keep them in the freezer when fried beets craving hits.

 

Ingredients

  • 3 large beets
  • ¼ C vegetable oil + extra for frying
  • ¼ C white vinegar
  • ¼ C cornstarch

Dipping sauce Combine and set aside.  Or if you want to get a good premade sauce like Whataburger Jalapeno Ranch is also a nice option 

  • ¼ C Kewpie mayonnaise 
  • ½ tsp each of salt, pepper, red pepper flakes, cayenne, red pepper flakes and lemon pepper, adjust to taste preference.
  •  ¼ tsp Togarashi sprinkled on top adds a spicy kick at the end.

 

Instructions

  1. Preheat oven to 375 F.
  2. Rinse beets.
  3. Roll beets in vinegar and oil bowl.
  4. Wrap each beet in foil.
  5. Roast 90 minutes until outer layers peel off easily, use gloves to prevent stained red hands. Make extra beets to freeze for quick snack to fry up later.
  6. Cut beets into bite size cubes after peeling.
  7. Toss cut beets in cornstarch and fry in 350 F oil, until crispy outside, in a few minutes as the beets are cooked.
  8. A spider and wire rack helps to drain oil from the fried beets.  I use long wood chopsticks to move the beets around the oil, tongs would work as well.
