Beet Fries
This is how I like to eat vegetables, baked and fried with a spicy dipping sauce. An air fryer works great for this since it's just 3 large beets, no need to heat the house with the oven. Or double the beets and keep them in the freezer when fried beets craving hits.
Ingredients
- 3 large beets
- ¼ C vegetable oil + extra for frying
- ¼ C white vinegar
- ¼ C cornstarch
Dipping sauce Combine and set aside. Or if you want to get a good premade sauce like Whataburger Jalapeno Ranch is also a nice option
- ¼ C Kewpie mayonnaise
- ½ tsp each of salt, pepper, red pepper flakes, cayenne, red pepper flakes and lemon pepper, adjust to taste preference.
- ¼ tsp Togarashi sprinkled on top adds a spicy kick at the end.
Instructions
- Preheat oven to 375 F.
- Rinse beets.
- Roll beets in vinegar and oil bowl.
- Wrap each beet in foil.
- Roast 90 minutes until outer layers peel off easily, use gloves to prevent stained red hands. Make extra beets to freeze for quick snack to fry up later.
- Cut beets into bite size cubes after peeling.
- Toss cut beets in cornstarch and fry in 350 F oil, until crispy outside, in a few minutes as the beets are cooked.
- A spider and wire rack helps to drain oil from the fried beets. I use long wood chopsticks to move the beets around the oil, tongs would work as well.
